🔥 VEGAN SUSHI BOWL 🔥
⠀⠀⠀⠀⠀⠀⠀⠀⠀
This vegan sushi bowl is everything you love about sushi, served up in a bowl, and topped with spicy mayo! 🤤 It’s packed with tons of veggies, teriyaki tempeh, and of course, rice. I used a blend of brown and wild rice for my bowl, but you could use any rice or other grain of your choice.

INGREDIENTS (serves 1)
★ ½ cup wild rice, cooked
★ ¼ cup shelled edamame beans
★ ½ avocado, sliced
★ ¼ cup cucumber, chopped
★ ½ cup carrot ribbons
★ 1 sheet roasted seaweed
★ 1 tsp sesame seeds
★ 1 tsp sesame oil
★ 5½ tsp coconut aminos (or soy sauce)
★ 3 tsp rice vinegar
★ 2 oz. tempeh, cubed
★ 1½ Tbsp maple syrup
★ 1 tsp garlic powder
★ 1 tsp ginger
★ 1 Tbsp vegan mayo
★ 1 garlic clove, minced
★ sriracha (to taste)

INSTRUCTIONS
1️⃣ 𝐓𝐇𝐄 𝐁𝐀𝐒𝐄: Combine the cooked rice with ½ tsp sesame oil, ½ tsp coconut aminos, and ½ tsp rice vinegar; set aside.
2️⃣ 𝐓𝐇𝐄 𝐓𝐎𝐏𝐏𝐈𝐍𝐆𝐒: Prepare and cut the avocado, cucumbers, and carrots, and break up the roasted seaweed into small pieces. Air fry the edamame beans (optional) with ½ tsp sesame oil at 320°F for 10 min.
Air fry or bake tempeh cubes at 320°F for 5 minutes. Remove tempeh from the air fryer/oven, toss in a marinade (1½ Tbsp coconut aminos, 1½ Tbsp maple syrup, ½ Tbsp rice vinegar, 1 tsp garlic powder, and 1 tsp ginger), and return to the air fryer/oven for an additional 10 minutes, or until browned.
3️⃣ 𝐓𝐇𝐄 𝐒𝐀𝐔𝐂𝐄: Add the mayo and sriracha to a bowl with 1 garlic clove, 1 tsp rice vinegar, and ½ tsp coconut aminos; stir to combine.
4️⃣ 𝐀𝐒𝐒𝐄𝐌𝐁𝐋𝐘: Assemble the bowl by starting with a scoop of rice and arranging the rest of the ingredients on top. Sprinkle with sesame seeds, drizzle with the spicy mayo, and enjoy! 🥰
